Smoking a ham

Hi all, I'll be smoking a ham in the next couple of weeks, would cherry pellets with some chunks of cherry wood be ok on a ham? I've never used cherry before, not sure how strong it is...Thanks

That would be like feeding strawberrys to pigs.
I would if I had cherry wood :wink:

Thanks Mick, it's easy when You live in the cherry capital & Your mate has an orchard.....I'll give it ago & let You know how it turn's out..

Yes we had Cherry & Mountain Ash 50:50 :P smoked pork sauages for lunch today , :wink: very nice match. 8) we got the pellet from Terry at Aussie BBQ Smoke.com. MM :P :P

Well all I can say is a big "YUM". That cherry really puts some flavor into the meat, will be using it again I think.
Sorry I don't have any pics, just did a standard brine of salt & brown sugar with the recommended amount of kwikcure, then cold smoked for about 4 hours while the bride took me to lunch....got them into the oven at about 120c for a good slow cook & they're the best ones I've done yet.
Will have to get my mate to prune off a few more cherry trees this year..... :D :D
