Hi guys

I've been bbq'ing with the Q320 for a few weeks now and it's been a real joy. I've also been reading the forum daily and trying to piece together how to tackle various recipes. So far I've done steaks, chicken wings, sausages, pizza, whole butterfly chicken, lamb cutlets and lamb rack. I'm keen to start roasting in earnest, but would like your advice.

There seems to be a big focus on low and slow cooking (which is better suited to charcoal) and I'm not sure if I should be trying to mimic this with the 320 or just cooking at the 'recommended' roasting temp. The standard weber recipes I've seen would appear to be doing roasts in the 200c range. I'm guessing this would do a leg on lamb in less than 2 hours.

Would I be better trying to roast on a much lower temp and taking 3-4 hours? I have an ET-732 so can cook to temp. Would the additional couple of hours make a difference or do you really need the 6-8 hours at 130c?

Also, do you brown first at high heat and turn down or do you turn up heat quickly at the end (or not at all)?

HI Windsurf.
Glad you are loving your Q.

There is nothing wrong with doing 'low n slow' on a 320.
Depends on what you want to cook.
I do some sort of low n slow every week in my 320.
Usually beef or pork ribs or a pulled pork.
And also normal temp roasts too.
Works beautifully either way.

Low and Slow
Foil and trivet method, centre burner on low. outer burner off, should give you a lid temp of about 115 - 125C

This forum is awesome...getting some great info on how best to use my Q320 :)
With ribs what would you say would be the best time/method of cooking?...bit hard to find a meaty enough piece to ram a thermometer in is all.

Going to try a low leg lamb soon done one for 7 hrs but didn't let rise high enough so bit longer next time

Hi mate, I do full cooks or legs of lamb and in both cases I place them on the trivit with the outer ring of my q300 set to 200 degrees for approx 2 hours depending on size. I put veggies in after an hour and the result is mouth watering.

With steaks I seal on the bars then place on the trivit to finish.

For the past 2 years since getting my q300 I've not done a roast or steak inside.

Are most people using the lp or ng version?
Doing the job properly is no excuse for not meeting the schedule...
