Two spatchcocked Turkeys on a Genesis e330

Post by sydprop »

Hi All,

I've found myself in a position where I need to cook two turkeys this year. I was planning on trying the spatchcock method (e.g. serious eats) brined but just for one bird which would easily fit.

I've never spatchcocked a Turkey so can't quite picture the size nor organising the legs. I could stagger the cooking (or use the oven - yuk) but ideally I would do it at the same time. Does anyone have any experience on whether two might fit?

Ideas welcome.

How big are the turkeys?

If the two don't fit in the e330, try this.

I'm assuming you are using smoking chips to add that extra bbq flavour. Each Turkey takes about 3 to 4 hours to cook.

Start the first one in the e330. About 1 hour of smoke. Move to pre-heated oven to finish.

Start second turkey in e330.

The first turkey should finish about an hour before the second. When the first turkey finishes. Wrap in foil. Wrap in tea towels. Put in esky. Should stay nice and warm and not dry out.

Both turkeys should have a nice bbq smoke flavour and be moist.

Lot's of ways to cook the turkey here. http://www.britishturkey.co.uk/cooking/

Don't forget to tent the turkey
