New Built in Barbeque Area Question - advice needed :)

Hi All,
we were fortunate enough to inherit a Stone Benchtop from my work when the old alfresco was demolished. It is 2600mm wide x 1300mm deep with a cutout section in the middle for a BBQ which is 1305mm wide x 660mm deep. Bit of a score!!
To top it off my mate who is a bricky has been helping me out and we have bricked up the area and will be rendering it shortly. Getting pretty excited as i've always wanted an built in bbq, and we've managed to do this so the top has an overhang of around 300mm so it will double as a bar area.

Now onto the business end. We have our eye on the Everdure Brighton Esee Built in because it fits the area really soundly (leaving approx 30mm each side of the bbq), but obviously it is up there in price. - $2299 RRP
We also had a look around the stores and I spotted the Everdure Ashburton Esee which comes on a trolley but is a hell of a lot cheaper. - $1599 RRP

My brain went into thinking mode, and I was wondering if anyone knew if you could simply just not build the trolley and use the Ashburton as the built in?
