What to do with Sweet Peppers.

Any imaginative ideas to what to do with a basket of sweet pepper.
Pickles?
Sauce?
Jam?
Anything interesting?

Those long red peppers are fantastic, I've had a bumper crop of them in the backyard this season :D
I cut a looooong oval shape out of the top of them (scrape out the seeds for those who don't like them / leave in for those who do).
I usually stuff them with a mixture of cooked & cut up mushrooms, bacon & onion.
Then pop the cut off oval lid back on top.
Depending on the heat, plonk them into the kettle for the last 10 or so minutes of the cook.

The only thing left on the plates with them is the tip of the stem :wink:

Stuff them with garlic flavoured mince and smoke them until the mince is cooked.

For the rest, I pickle some just as they are and some I char on the grill, then pickle. Fantastic sandwich topping!

Cut tops off and remove seeds, fill with Feta and some minced garlic smoke indirect for about 20 - 30 minutes. Sit them upright when cooking.

If you've got too many, just chargrill them and store in jars covered with olive oil.

Make a sweet pepper croquette.

The stuffing - mashed potato, chives, and bacalao (dried salt cod). Grill the pepper then roll the stuffing in it. The flour, egg wash, breadcrumbs, and deep fry.

Slice in half lengthwise, fill with cream cheese, wrap in bacon, smoke until the bacon is cooked.

Not so sweet it appears.
I must remember to label stuff I grow.
What are these? chewing on peppers while chopping up and some are hot.
These took my top lip off.

I'd stuff the ones on the left. Preserve some of those others in a vinegar, salt and garlic solution.

Most went to sweet chili sauce,added a kilo of jalapeno peppers and made some sauce.

Still a bucket left,they can go to work to share.
Stuffed a few and yum.
