New poster here ... please don't bite I see that one of my recipes has already been posted by another OCAU'er - Peri-Peri Chicken. This corn makes a nice accompaniment to the chicken.
Ingredients
- 1 ear of corn per person
- Butter
- Paprika
- Honey
- Salt and pepper
- Grated young Manchego preferably. Pecorino or parmesan can be substituted - make sure you grate it fresh!
Procedure
- Clean the corn then chop in half. Skewer the corn. Wash the corn thoroughly, then when still wet, microwave each ear of corn for 60 seconds.
- Mix the butter and honey in a 1:1 ratio. Add salt and pepper to taste. Brush this on the corn, then dust with paprika.
- Roast over a BBQ for 2 minutes, turning frequently.
- Roll the corn in the cheese
- Serve!
