Duck Fat Potatoes

Here is an easy recipe for some great tasting Duck Fat Potatoes.

Start with large white potatoes, peeled & halved

Put in a pot of cold water & little salt & bring to the boil from cold

Let boil for a few minutes

Place in a colander & toss the potatoes until the edges are all rough ( if they are too hard, boil them for a few more minutes, if they break apart then you have boiled them for too long )

Once rough, place in an oven dish & pour Duck Fat over them ( You should be able to buy "LovaDuck" Duck Fat or like me, go to an authentic Chinese Restaurant who hangs their own ducks & buy theirs :D )

I cook in a fan forced oven at 190C turning them a couple of times - although I must try it in my Pellet Grill.

They look delicious :)

I've done this a few times but the recipe included salting the water which helped give the spuds a bit more flavour, rather than salting at the end.

I dry mine after the boil I find they crisp up a bit better. But they do look good!!!
What's an oven Dave???

I do them that way almost every week and put them directly on the grill rack in the kamado (indirect of course). Roughing them up in a saucepan works too but be careful if they are a bit soft or you'll have mash ! :D
Last week I did them in the GMG Pellet cooker and they were great there too. I just cringe when I see people put roast spuds in a foil tray with oil etc.

Sounds like you need a Kamado to cook potatoes in Dave?? It's hard to beat that charcoal flavour on a spud :wink:

They look great Dave!

I actually find that it pays to get picky on the type of potatoes you use for different things. Sebagos are a great alrounder, but I love duckfat kipflers with rosemary and sea salt at the moment.

Slightly off-topic, but desiree's for mash work so much better than a run of the mill potato too....

Mate, as much as I would like a Kamado, ( as I agree with you on taste on the spud ) with 4 or more Yoders here at any one time, my Missus would KILL me if I went out & bought another :shock:

Been having a great time with kipflers of late, great tasting spud, pity they are expensive but worth it.

Don't think I've ever used duck fat for roasting though, lard or butter, must give it a go.

I've cooked potatoes in duck fat for the last few years. About a month ago I had run out of the gooey wonder and used oil instead. Well I'm never doing that again :)
If I get thin skinned clean potatoes I leave the skin on. Yummers!

Make your own Duck fat, its real easy.

I get a batch (300ml) out of every second Duck that gets processed around here :wink:

Same here, about an hour at normal roasting temps but it depends a bit on the size of the spuds. Bigger can be a bit longer.

Come to think of it did get some duck fat from the last duck - cover me, going into the bowels of the fridge :)

In my family its sort of standard to just collect the fat drippings from any roast, beef, lamb, pork, chicken, before making a gravy, just pour off, I keep mine in a large soup mug and use as required to roast root veg, in particular potatoes.

Be interesting to see if duck fat does anything better :)
