Did my best pulled pork so far, 5 hour cook, then 3 hours esky. Have to admit was still really hot after 3 hours. And enough for lunch, and dogs ate the rest.

Look delicious. Looking at the temp on the thermopen it was about 15C outside. At these temps the insulation on the Akorn makes a big difference to low and slow compared to a kettle.

find my akorn sits better between 275 to 310, 225f to 275 is hard work

I found that the type of charcoal I use affects the low and slow range. Some just wants to burn hot and fast with too much ash for low and slow.
I also read somewhere from John Setzler (Kamado Guru) and in summary about temp ranges he says, chill out and enjoy the food and don't waste time "doing it by the book". Close enough temp is good enough if it works.
