I have added water to my drip tray in the BGE but am quite concerned with the possibility of water spilling and the Kamado breaking.
Having just the driptray burns the fat.
Do what is a better alternative to water in the drip tray to prevent fat burn off?

Kamados cook with lots of moisture by default and you don't normally have to add a water tray like you do in a weber kettle.
You can let the juices drip onto the deflector to add extra flavour. If you like having a clean deflector, get a spare pizza pan and cover it in foil and put it on the deflector.
If you still want to add a water pan, put in a drip tray and add about 1 cm of water. Another way is to add no brand kitty litter in the bottom of the tray. No brand is used a there is no added perfume.

The no brand is inert. Great for absorbing stuff.

Depends on what you are cooking but start out with a thin covering on the bottom of the drip tray about 2mm thick.

In my Dragon, I sit a drip tray on top of the pizza stone deflector under the grill grate on a couple of egg rings.
I find it doesn't heat up as much as sitting directly on the deflector
Works well for me as I only low and slow in the dragon
Disposable aluminium trays work wonders for helping to keep the deflector clean too.
