What is your best dish in a Kamado?

Just putting it out there.
What do you think is the one dish that makes your Kamado shine and why?
I have cooked on mine at least 3 times a week since November and am still working out the potential and versatility of my kamado.
I love it for low and slow pork shoulder, ribs and pizza

For quick and easy its hard to beat a marinated flat chook grilled direct.

What a difficult choice!

Porchetta is right up there for me. The reasons are the easy temp control and moisture retention of the Kamado and the low charcoal consumption for what ends up being a set and forget 4 hour roast.
The other favourite for me is Kamado paella.

Hoddo,Gumb yeah I have had some good feeds of chook on the Kamado so far. I like to marinate in Greek yoghurt,salt pepper for a coupla days.
Narmnaleg I haven't tried Porchetta yet and never thought of doing a paella +1

I'm still new but my pulled pork has been the best recieved from my guests, captains brined chicken would be next but my personal fave is the Stufz burgers charcoal grilled. Pizzas second with the authentic Italian pizza dough. I'm slowly working through the ideas here and all have been exceptional.

Not a specific dish, but chicken generally.

For other things like brisket, pulled pork, seared steaks etc it's possible to get a result like what you'd get from a commercial establishment, but for whatever reason chicken (done almost any style) is always better than anything I could buy.

Looks great Nath, GG cooking Naan on the lid is raising the bar for sure. Dont have the tandoor attachment on mine. new project :D
