If you use the three bead snake, your OTG will run at between 100C and 110C....Perfect!

Thanks Chris. Will use your advice, and run it with vents open for the first couple of runs!

I go for anywhere between 100 and 120c. I find the snake with a water pan, top vent fully open, bottom open a crack will get me that temp - nearly set and forget.

The only thing that catches me out is the massive amount of ash the beads make clogging up the vents and starving the fire.

Get a bit creative with a BBQ drip tray.

It now seems so obvious! Will definitely do this next time, my overnight cooks seem to always die at about 6am due to ash buildup.

Thanks for the advice gents. Put on a lamb shoulder this morning at 7, pulled it off at five, rested and just pulled - looks and tastes great!

Fair call, just a warning a chimney full of beads/charcoal can leave a mess underneath!

That's the ash catcher out of a Happy Cooker kettle, I've been searching for one for ages
Apparently they work great and stop the ash clogging up the vents

Going to try a snake soon, seeing that reminded me I have some old hub caps in the shed, real ones not the plastic rubbish, that were off an old Holden. (Not mine, mate was wrecking it, they seemed about the least deteriorated piece :) )

Just checked, looks like could act as a reasonable ash catcher with a bit of work :)

this thread is really old but i want to chime in

heat beads are pregnated with an accelerant to burn....its why u are supposed to leave them a while before cooking on them. I would not recommend this method with the branded heat beads unless u want to contaminate your food....lump charcoal go for your life
