They can be a buggar if they are hot!
I keep an old fork in my BBQ kit!
Poke the tynes through the leg ligament to stop them floppong around!

I just use an old pair of pliers that have been relegated to permanent BBQ duty.
The pliers are good for holding the rods while unscrewing the extension pieces out of them, and also for grabbing the hooks & pulling them out of the meat when needed (if it's jammed into a bone, tendon or sinew & won't come loose).
They also work the burner knob on the wok burner for lighting the chimney (plastic knob is useless on a warm day).

Old pliers??
I have a new set of pliers for my spit. Once they get a bit old they go into the toolbox, and I get a new pair for BBQ! Lol
That fork idea's pretty good too!
