vac sealer trick

Post by hoddo »

Here's a trick I use when vac sealing juicy meats with a home vac sealer, you know how the liquid comes up and into the chamber and its hard to get a good seal? I roll up a paper towel on the diagonal so its wider than the bag and tuck it in nice and tight to the edges and away you go, it will usually absorb the juice long enough to get a seal. Freeze first is another option, but when doing a lot of bags this works great.

yes the wad of paper is flattened by the suction and acts as an absorbent barrier the juices have to pass through before they can exit into your sealer, the other bit of paper you can see around the bacon is a bit of baking paper I put on the scales, makes it easy to pick up the meat and slide into the bag.

You can also put your produce into a freezer bag wrap it up then Vacuum.
saves the liquid oozing up.
just another way .

Good trick, hoddo. I do both of them, too! (well, almost... I usually use Glad Go-Between instead of baking paper)

Works a treat on anything that's a bit juicy.

I do that as well but also find it helps to use paper towels to dry the food first. That often means I don't use the paper inside the bag but it's a method that works well.
