Well my 14 kgs of brisket is on

18 WSM
Red performer
Brownie M/T

1 brisket in each

So your saying I could put all in WSM?

If it fits.
The reason why is that the wsm is so reliable for an overnighter. The snake can fail if not done right or shit can happen.
Also with a full fuel load the wsm can be dialed in at 160 F to park the meat for quite some hours once its done.
Ive had mine cooking and then holding for 20 hours total. whenever I do that kind of cook it is always a better result to starting at a hung over 7AM and pumping the peddel to the metal so there is something resembling pulled pork at 7 PM

Within reason but yes they will shrink up and touching the sides is not like getting girls germs.
and the meat touching each other is not like playing doctors and nurses
Fat cap up or down is a load of cods wallap, Its just got to be in there.

i did read late last night



had a snake out on one of the kettles at 10pm then as relighting had a blackout

440am WSM had dropped added more fuel

now all sitting at 185 / 235
