My Maverick thermometer suddenly started playing up during a cook yesterday so I switch to another thermometer and everything went fine. I was about to order another probe when I read up on how probes can play up if water gets into them ! Now I have been very careful to make sure that this does not happen so thought it cannot be water until I read on a site about smokers and using water and the humidity getting into the probe, the last time that probe was used was in a water smoker for about 10 hours so Im guessing the humidity may be the cause.
The way to fix it, if this is the case is to place them (just the probe end) into a hot oven for an hour or two around the 100deg mark, so I will give this a go tonight and fingers crossed it fixes the issues.
