I picked up a packet of Screaming Seeds "Marrakesh Magic" on the weekend as I wanted to do some Lamb Steaks and thought that I would try a store bought rub instead of making my own. The flavour was sensational; you could tell as soon as you opened the pack that the spices were fresh. I think that the trick with this is that you don't over rub them, I used a heaped teaspoonful for 4 small lamb steaks.
For the prep I took the lamb steaks out of the fridge, sprayed them with a light spray of olive oil and then sprinkled them on both sides with a little "Marrakesh Magic" and let them come to room temp while I lit the Q220. All I did then was put them on the Q with a light sprinkling of salt flakes and cooked them for 2 1/4 minutes a side on high. Absolutely fantastic. I am looking forward to trying their Rainforest Season on a butterflied leg of lamb next, their website (http://www.screamingseeds.com.au) describes it as "refreshingly fragrant, a lemon pepper style, with indigneous flavours, invigorating, crisp with a hint of peppery flavour" That sounds exactly like the flavour I want to achieve. To make sure that I don't burn the flavour too much I will cook the lamb on top of the trivet over direct heat on the Q 220 instead of directly on the grill, probably with the temp down two or three strokes for about 15 minutes a side.
