Looking for a good butcher on the GC

Hi all,

I'm just wondering who your preferred butcher is on the Gold Coast? I've been to a few, looking to buy ribs who told me they can't do it coz restaurants buy them all up! Where can I buy the ribs on the Gold Coast? (Other than Coles coz they are tiny little things!)

They are resteraunt suppliers and no shop front but will take an order.
Sometimes a few of us get together and make a bulk order to make it cheaper.
He knows all the US cuts but his pork ribs have been a little differing in size but still good
Card chark knows of a place out on the hinterland that sells good ribs.
If trees screamed when we cut them down, We wouldn't. If they screamed all the time we would.

+1 Sprats. Gold Coast Meat Center has brisket and hanger as well if looking for secondary cuts. http://www.gcfmc.com/

Don't know anybody locally on the Coast selling pork ribs USA style other than smallish "shiners"...(seeing bone both sides). In the states, a slab was around 3 - 3 1/2 pounds and MEATY!. :wink: Perhaps when Costco opens in Broadbeach, a larger product will become the new standard here that others too will offer. Today...Schultes Meat Tavern over the hill are worth a look in if on the Warrego near Gatton. http://www.schultes.com.au/index.php . CS

There are a few options you can look into right now when you find a good butcher.

1. Ask for bone in pork belly. Ask the butcher to cut ribs to your liking. The remaining belly can be be roasted or smoked as streaky bacon. You can also just him to cut ribs to your liking also and forget the belly, although he might charge you more p/kg for the ribs.

2. As your butcher to order in or cut the riblets from the forequarter. They are smaller but meaty and inexpensive. Do a search on the forum under 'pork forequarter ribs'

3. Ask your butcher to order in 'full plate ribs' from their supplier. These are the big racks they serve at the steak and rib joints here in Sydney(and probably elsewhere) ie Hurricanes, Ribs n Rumps etc. They could be the whole side rib cage, not sure but they are big and awesome.
