I think Kamado cooking is Hands On, you have to set it up properly for the task, just like a kettle, you don't have to keep charging the fire like on an offset, but it's not set and forget either (that is the joy of a Traeger). I see no difference in setting up the Kamado to do a 10 hour cook at 220F and laying a snake in a Kettle. Same but different!

Hi titch mate....
wat i mean by that comment is... if i throw in some pork at say 8pm... and sleep through the night... can i trust it will hold 220 (or whatever temp for that matter!) all the way untl the next morning / arvo??
Not without a Stoker or Digi Q you can't. It may well do it but you'd need to be on top if it all the time. The controllers take all that away.

I can run 180F, 200F or 220F for 10 to 16 hours without looking at it, no mechanical aids, just careful charcoal placement. I get up at 4 am to go and open the shop, I can start the fire, have a shower, put on the Pork Neck (butt) adjust the vents and I'm in the Lunch Bar by 5am.......home at 4pm, pulled pork for dinner when Management gets home at 6pm.

The Kamado will do it easy!

I've done 12 hour cooks without adjusting anything with my Royal, that was in Summer though, in winter I'm finding it harder and I think it could be due to the charcoal moisture content being a bit up and down

You don't need one for a kamado or a weber kettle or wsm. You may want one, but you don't need one

You are doing something seriously wrong for it to look like that.
Looks like its been over direct heat from the coals.
They are for low temp use and must be shielded from intense heat.

Yes replacements are in stock.

I would have to agree with Mick, it's got to get bloody hot to burn out.

These are quotes from the instructions:

"The Barbecue Thermometer registers temperatures as low as 32 ºF (0 ºC) and as high as 572 ºF
(300 ºC). LLL will be displayed below 32 ºF and HHH will be displayed above 572 ºF. Do not use
the stainless probe sensor above 572 ºF. Doing so will deteriorate the wire."

And.

"Do not allow the probe or probe wire to come into contact with flames."

I'd suspect there has been a really hot fire and the probe wire has been exposed to the flame. If you suspect the wire might be exposed you can shield it from the direct radiation with a strip of folded foil under the wire.

Cheers
