Jose Silva's rotisserie seen on Food Safari Fire

Post by pierre »

Last thursday watching the show I have seen an interesting small bbq that the Jose Silva guy, a portuguese chef based in Sydney, used to cook two butterflied chickens on charcoal. It did not use a traditional rod to spit the chooks but a sort of flat grill to keep the birds flat and steady. I could not understand the brand or else, anyone knows something about it?

didn't see the show, but if it's a rotisserie, possibly a basket is what you're describing

That looks like what I remember.

on a side note
I saw a larger set up with loads of chooks in a similar thing spinning fast on another show

Spin slow fat drips on the coals, spin fast fat rolls around the birds.

I have never seen one as that big in any shop.
I do have a large foldable wire frame that could be turned into that.
Its designed to take 2 butterflied chicken over coals.
Maybe got it From Rays I believe,

great show BTW

You nailed the brand I believe, the bbq is just a Cyprus, the thing is the rotating grills they sell are 12 cm wide while the one on the Fsfire was at least double the width, meaning you don't need to cut the chicken in two halves
