Post by crtx » Tue May 12, 2015 12:17 pm

Hi Guys,
Spinning 35kg yiros chicken & lamb mixture for our sons first birthday and baptism over the weekend. Cook on charcoal and smoked with cherry apple peach plum amazing. Total cook time was 13.5hours. I'm background of greek heritage and wife is Italian so we had enough food to cater for 85 people. Sorry for so many photos!

FANTASTIC JOB! Did you register that huge attempt with Guinness Book of Records?
Brave man cooking that much meat for that many people, glad it all went well. Love the professional Salad Bar, and the creative Fruit Salad Smoke Marinade.
Your son has now been baptised into the world of the great Aussie BBQ.

Did you cook it all at once and serve or cook and cut and serve?

Thanks guys.

Cooked it all on Friday started 7am finished up 9.30ishpm had everything foiled in trays in the fridge. Sat had baptisim at 1pm back at our place by 3pm ovens on meat in by 4.30pm rehydrated with lemon juice gave it a good ol mix and served.
No one new it was all cooked the day before juice as. Took 7hrs before i done the first cut rod was up high and a real low n slow. Plenty of lemon and basting in the process.

It was like a full catering service. Bay marie i had borrowed.
