Hi Titch, I have seen that book in Essential Ingredient in Prahran, and also at Books for Cooks in Fitzroy.

Hi Titch

What's is your impression of the books so far? Which one would you recommend for a beginner looking for easy step by step instructions for basics like ham, pastrami, bacon, jerky & such?

I find myself using and marking this book the most,
1 "Great Sausage Recipes & Meat Curing: 4th Edition"
Rytek Kutas; Hardcover; $19.77
then Google on top for recipe specific .
Charcuterie: The Craft of Salting, Smoking, and Curing"
Great book but I use it less.
Hope that makes sense.
Cheers.

I think so :) Get basics from book & specifics from Google?
I won't be doing sausages so is most of it curing meat?

Sausages are just bthe basic in it .
the rest is meat curing.I do believe that most of the info is available on here and the net.
I use the book as a base for my searches.
Where abouts are you.(save me searching,)
Cheers.
