If I could only keep one book....

...out of the many, many cooking related books I have, it would be:

"Keys to Good Cooking", by Harold McGee, ISBN 978-0-340-96320-3

This book contains easily accessible food science and techniques. Not a BBQ book, but has useful stuff on BBQ, grilling, smoking, brining and explains meat and seafood chemistry really, really well.

Well written, and it is recipe- and picture-free, so you can decide what you are cooking all by yourself, and you don't have to see a picture of what you just tried to cook, plated better, and with glycerine coating, in a romantic setting with a duck pond in the background!

You could do much worse than buying/borrowing this book.

Which book would be your choice if you could only keep one?

On Food and Cooking
by Harold McGee

ISBN-13: 978-0684843285

More of a Bible or text book for food science and cooking really, the pre cursor to "Keys to Good Cooking".

Cooking for One - Delia Smith, given to me as a parting gift by my ex who thought I would starve to death.

This book inspired me to impress the kids when they visited just to make a point! And later took me to TAFE when I finished up working as a Chef in Army Bases and Boarding Schools doing bulk cooking.

The other book would be The Cookery of England, Elizabeth Ayrton 1974 Penguin Books, simply for the Melton Mowbray raised pork pie recipe!
