48 hour brisket

48 hour brisket is one of the recipes in "Cooking For Geeks" by Jeff Potter. The title of the book caught my eye and it is no disappointment for the geek inside.

Not specifically about BBQ but lots of geek stuff on food science such as different temperatures at which certain chemical reactions occur (such as collage -> gelatin).
