How do you reckon using dark rum instead of JD would go in the rib sauce? Thinking for pork ribs rather than beef.

Just what I was thinking Wayne, both the Rum! and the Hangi!
Saw some nice looking spiced dark rum at Dan Murphys in Duro rd Freo yesterday when I was making notes for Santa.
The Hangi is more of a steaming process, but it sure as hell is the same idea!

Both would work.
Just remember these are distilled liquids, the taste carries but if you iodine test them theres no available sugars, so yes but no, sugars don't carry in vapor.
