Nice find and great share
Its the simple pre industrial flavour combos that get me interested.

MMmmmm....and "Allow about a pound and a half per person" That's 750 grams!...I wonder how much JD you wash that down with!

You kind of expect some of the recipes to start with "first catch your pig"

Good score Chris. Reminds me a bit of the old CWA cookbook Jans Nana left her. Nearly every second recipe starts with " find a clean kerosene drum " :-)

How do you reckon using dark rum instead of JD would go in the rib sauce? Thinking for pork ribs rather than beef.

Bentley was wondering about kiwi Hungis.............. From the Pit BBQ instructions it looks like they do it in the good old USA too! :D

Cheers, Wayne and Jan

Dark rum has molasses ,JD has corn syrup and maybe some Maple Syrup
Both would work.

Just what I was thinking Wayne, both the Rum! and the Hangi!

Saw some nice looking spiced dark rum at Dan Murphys in Duro rd Freo yesterday when I was making notes for Santa.

The Hangi is more of a steaming process, but it sure as hell is the same idea!

Get Bentley to look me up, I do a traditional Hangi once a year and can give him pointers if he interested in doing one :)

Just remember these are distilled liquids, the taste carries but if you iodine test them theres no available sugars, so yes but no, sugars don't carry in vapor.
