Pitt Cue Co. - from the UK
Pitt Cue Co. - from the UK
This book is from one of the places I was lucky enough to visit earlier in the year. It is food truck that in 2 years grew to a restaurant in Soho, London. They've partnered with top restaurants to push their game and its one of the best books on BBQ I have read. They aren't just repeating classic BBQ recipes - they're rethinking them and taking them to another level.
A few of highlights:
- a rub with ground bacon in it for ribs
- a mother sauce "the meatiest of all sauces. Not sweet or acidic, like a BBQ sauce, but a sauce so packed umami and smoky meatiness that you would taste it hours later". They use it as a finishing sauce instead of injections, often with other sauces.
- fruit ketchups (eg peach or pineapple and chilli)
It uses UK butchery & cooking terms and temps in celcius
