weber Burning charcoal to fast
I am new to Weber BBQ’s and tried to slow cook a brisket at 120 degrees for 10 hours. It turned out good but the meat didn’t pull apart like I would expect and kept topping up the charcoal to maintain the temperature. Any ideas for improving the next cook?

Hi Damo, don't know what charcoal you're using or which set up you used in your cook with the Weber...I need to know this in order to advise you. Once I know how you set your Weber up for the cook, then I may have a better understanding of where it didn't go well.

How are you setting up your charcoal? If your just lighting it in the weber baskets all at once then yes they will get very hot, burn out and you need to refuel.
A common charcoal setup is a snake method. That will easily burn low and slow for 10 hours without the need to refuel.
