I always struggled getting the can out of the chicken. Makes a mess. But today came up with the Skewer through the can, hold and lift! Gave all three BBQs a big run this weekend, as well. Been told by the wife to start emptying the freezers.

I personally don't believe that the beer does anything for the chicken as the cavity is relatively shallow and to stabilize the chicken, the can is generally up too far for any beer steam or vapour to do anything except escape out through the neck...a good brine would be a much better way to ensure the bird retains moisture.
What beercan chichen does acheive is a well, evenly balanced roasted bird,every sq mm of the bird is cooked to perfection..most of the time.

I think you're 100% correct. Only reason I use the can for is to stand it up. I did filled with water to keep some weight in it and put some Rosemary in it as well.

I don't do beer can chicken in the Kamado but still do it in the kettle.
Good for infusing some moisture and flavour.
A trick I found is not to use cold water in the can. Try boiling water. Chicken soup.
