It's good to always be cautious. But from experience cryovac meat can have a bit of a smell to it. They should last a few months in the cryovac. So I would probably eat them. Was the bag still well sealed or had the vacuum been lost?

Nah the seal wasn't tight on these ones. These will be getting turfed. The smell is a bit strong compared to another pack.

Hard to say from pics, but I'd cut any grey off and I'd brine them....then you should be OK, They will start to oxidize if the seal is broken and that be the smell.....this can happen when opening the carton or just with handling or in you fridge if others are moving bottles etc. I always freeze the packs that are not being used strait away.

Maybe Rob had a pin hole in the cryovac or something, I would trim it off and do like Chris says, smash it with salt

I couldn't bring myself to even feed them to the dogs. The smell was so bad it stunk the house out for a while.
Cooked the others up and they were fine. Have had them for dinner the last 2 nights. They are huge ribs and so moist.
Gotta sort out a weekend to try this brisket now.

Too rough for the dog?!?!
I walk around my yard with a log splitter and split open all of the knuckles (hip joints) and split them open for my dog and eats all of the green and yellow ooze that comes out - i think its the dog version of cocaine - he loves it

The smoke ring is a result of the cooking method. Add some nitrate to your rub (only a smidgen of a bee's watsaname), or add some heatbeads to the fire, or some burning (not smouldering) wood.robduca wrote:A pic of the ribs I cooked up on the weekend.

I have been lighting the charcoal, getting up to stable 250f and then throwing on a couple chunks of hickory wood.
