Here is a picture of someone using a WSM:

Fab...that WSM is one of those new mini 14 inch jobs....not the 18.5 inch....thats why the bloke is on his knees....and they are not available here either.

Another suggestion would be one of those small GMG pellet grills that UG has....for just a couple of hundred extra...he don't need to worry about vents....just fill up hopper, turn it on, set temp and go to bed for a good nights sleep....ideal but gotta find the extra few dollars.

Steve are you able to see the chargriller at bunnings?

The chargriller will take some learning at low and slow and may need some sealing (you can use the stuff used for fireplaces), but will be a great charcoal grill and will be a low cost gamble. From memory it costs under $200.

Oh ok Davo, that makes sense. I thought it was even lower than I remembered! :)

I haven't considered a pellet or a offset like the Hark Tri-fire. I'll peruse the threads. You city guys are lucky as you get great second-hand buys coming up all the time :) Pellets sound good for Overnights.

I love my Hark Tri Fire but it's heavy to move around so that could be a problem for you.

Cost is $169 and you can get a side firebox to turn it into an offset for $99. Looks good. It's not at my Bunnings but I'll see if I can find where on is.

just a thought...

you have the gasser/rotisserie/smokai and you want charcoal flavour and low 'n' slow.

possibly you could remove a couple of the gas burners/diffusers and put a charcoal
basket in that area. rotisserie should work OK, not sure about the grills.

low 'n' slow might be a bit harder to control - maybe leave one burner at the side (on low),
with a small charcoal pile. might work - hopefully others have tried this and can post
their results.

The problem with the gasser is one burner on low runs it a bit too hot. Also the back of the hood is an open slot when the hood is closed. It's 75mm by 1 metre. With something that big the hot air just rises and takes the smoke with it. It doesn't mix the smoke under the hood.

Was contemplating making up a series of "tuning plates" to selectively block of parts and make the air mix more under the hood.

If you're after a kettle, rays outdoors has them on sale now for about $320 and about $25 delivery to Armidale.

Steve I'm 6ft6" with dodgy knees and use a ProQ Excel20 and love it but its not a set and forget overnighter style smoker mate full loaded with lump and a full waterpan you'll get 6hrs tops before it needs reloading and topping up but as for versatility and bang for buck its an awesome piece of kit IMO

Guys

Thank you so much for all the info!!! It's great to have a resource like this. I'm going to go through the info and work out what to have a look at in Sydney. I have a specialist appointment in July that just happens to coincide with the weekend the dragons play the rabbits at the SCG. My son is taking me to the footy and I'll peruse BBQs while in Sydney, as well as several craft breweries!!!

I know it's going to be a hard ask but if all else fails and I decide I can't cope with charcoal then I'll get an electric smoker and play with the smoke to see how I can add the flavour. It's a compromise but I'll cope :)

Thanks again
Steve

There's always the Hark gas smoker, many here have enjoyed using theirs. Its like a cabinet type so easy to access and set up....Urbangriller sells them and uses them so he'll be able to answer any questions. I've seen some great results here from a Hark gas smoker. The only prob i can see that it may not get hot enough for roasting but i haven't used one so wouldn't know for sure.
Back to Weber kettle...they can smoke, roast & grill.

GO THE BUNNIES!!

The only problem is leaving a Gas Hark on overnight as it does not have a gas cut off if the flame goes out. I have the gas BBQ for roasting-I just need to sort the smoke mixing under the hood. Maybe if I fitted an LPG alarm in the BBQ area. The electrics can also go down very low for jerky and drying. This can handle my oversupply of chillies and tomatoes in summer.

But my heart wants fire and Weber is still on the list.

It will be a great footy match but even better when the Dragons win!!!

from everything you've said about not being able to get up during the night, ash clean out etc, i'm thinking pellet grill for sure

it will cost a bit more than your stated budget, but easy to use, easy to run overnight cooks and you can monitor and control from the palm of your hand!

Thanks for the suggestion. I'm looking at a few alternatives next time I'm in Sydney. I'll see if I can look at pellet BBQs as well. The fall back will be a Hark Digital.

My wife's mum is ill so I'm off to Sydney early. Getting down there on July 2nd for a few days and will be staying at Caringbah in the Shire. Can you guys suggest any BBQ stores/displays that I can get my hands on a few different options so that I can make up my mind which way I'm going to jump. It will give me a chance to see how arthritis copes with the various options that have been suggested.

I'm thinking Kamados, WSM/ProQ/weber, and maybe pellet grills. Also I wouldn't mind seeing some electric smokers while I'm down as my fallback.
