Well first proper cook on the kamado was a fail.

Was in a massive rush cause of a bad traffic accident. A 25 minute journey took close to 3 hours..

Anyway was going to smoke some ribs, got home 2 hours later than planned. Threw some lump in, lit it up.

Spread it out and on went the ribs. Didn't for one second occur to me I was essentially about to put them on to grill for 3 hours. Opened up to wrap and they were basically carbon. Tried to wrap with heavy saucing but it was too late. To make it worse there wasn't even enough heat left to grill some snags so they went in a pan on the stove.

Complete stuff up on my behalf, ruined a dinner I was really hankering :(

Yeah and if you want to grill, just get a steak. Not ribs. Maybe just try something simple like some sausages tomorrow for lunch, you need to play with it for a while to get used to it. Keep playing and you'll master it soon enough.

Don't think I will use it to grill, use the weber for that. Was just trying to use the heat for something.

Pork and beef ribs next weekend, won't be beaten. I know what I did wrong

Bugger mate, Everyone has those moments me included. Rushing when you are learning something increases the odds. Look forward to seeing the next cook aussieant my bet is you will nail it :)

At least I was rushing because of time, not rushing to cut corners I guess. All good, always next week

Shame about the ribs. We've all been there at some point. Next time take a photo of them and post it in this thread: What did you ruin?

Had to get back on the horse. Half a dozen hot wings for a quick snack. Pretty much mastered them in the hark and the weber, but wanted to use the Kamado. Deflector in, water tray in, lump where it should be. Guess what? Perfect. Funny what happens when you do it right. Juiciest wings I have though, maybe it was last nights failures making them taste better though :p

Feeling happy though :)

Cool :D

Give them a try without the water pan too, you'll be amazed at the moisture retention compared to a kettle.
