well i wanted to hold out on this for as long as possible.

Ally ( my daughter ) is getting married on November the 9th and guess who is doing the catering................GORDY............

we considered the Whole Hog thing, but the old ladies freaked on it, i wanted to do a 80kg hog in GORDY..............i am sure it will do it easy, but i have been informed that after the WOW on the taking out of the porker, it will become an ugly mess of a job, they got a little freaked on the carving and the bear claws.

so.....150 plus people, lots of booze...............

starters i wanna include vietnamese roll ups and lots of prawns and crab and octopus,

there will be all sorts of bangers made up by my local butcher, we have not yet completed the variety list as yet, but it will be to all levels of bogan and beyond.

now the mains

2 stuffed and rolled full pork loins, heaps of chicken pieces ( and maybe a couple or three beer can chickens for the kiddies to giggle over ),

the best recommended beef cuts from members of this forum.

venison dropped by my bow man, in doing this there will be no adrenalin taint, he is a bloody good shot.

i will of course be including ribs.............. pork, beef venison and lamb.

if i can get some pellets for the TRAEGER i will be using that do a couple of butterflied legs of lamb. if not i will be using the OLD TIMER and THE ORPHAN.

yeah.............sorry but boy am i going to put a show on for these people.

potato bombs, corn on the cob, and other vege things.

also...........if i can nut it out.....i plan to do some smoked whole salmon and sword fish for the fun of it.

now the fun starts...............choosing what rubs and injections and sauces i am going to make............'cause as you know the stuff you make yourself is definitly superior..........

should be a good day..............after the formal ceremony at the aussie pyriamid............followed by a hay ride down to the soccer club, and into party mode. of course i will be putting the bib and brace back on to complete the BBQing.

anyone got any ideas to help make this a hillbilly heaven.............?? :) :)

I think you need to push a little harder for the whole hog.. My god that would be amazing! 8)

I want to do one myself but do not posses the heavy artillery like you! :lol:

I was thinking tomahawk steaks but I reckon they'd be perfect for a buck's night.
Spotted them at Costco for the first time the other day and really want to cook some up.

Good luck with the catering, I'd get way too stressed cooking for that many people!

Congrats to your Ally :D
All I can say mate, Is try to keep it simple and cook what you know best or have done well before. You dont want to experiment on 150 people and on a day like that.
Id do butts for beef. People like it and its good value.
Get friends to bring electric knives and have a few or more of them slicing :wink:
Make sure your helpers have aprons to protect there sundy bests

i got a BBQ apron....................but damn.....that thing looks sooooooooooooooooo sweet.

and that bloke with the helmet on looks more like Shayne doing his tron thing.............remember those scary photos..??.. :lol: :lol:

thanks to you other blokes for the encouraging words, i will not step out of my comfort zone too far, and try impress, actually, all that stuff i am planning on, i have done before. but.............not all at the same time...............done by GORDY.........

so i will be going way back through most threads and postings as early as the start of time, to get all the brining, timing and temperatures ( both internal & GORDY ) just right.

also.......... i live up on the southern granite belt in QLD. Glen ( bbqmad ) has so generously put his hand up to play with his offset's big cousin. however if there is anyone else who would like a taste of QLD hillbilly fun...................i am sure we could use all hands, imagine the spectical when we have a line of carvers presenting those wonderful offerings.
