Couldnt see one posted similar to this but its a quick simple base I used with Chicken or my Crispy skin Salmon fillets.
one teaspoon of brown sugar
two teaspoons of Fish sauce
two teaspoons of Thai red curry past
150ml of Coconut cream.
Heat, mix, stir and pour. Only takes a couple of minutes to whip up.
From this base you can adjust ingredients to suit your taste, add things like chilli, garlic etc.

I like this, just did it over some mixed grilled seafood. Its basically a curry so I served on rice.
Was interesting to cook everything separate and then bring it all together at the table, rather then cooking the seafood in a pot curry.

Strange thing with Thai curry pastes, the green is hotter than the red, so if you like it a bit spicier go green.
