Habanero Hot Sauce

Habanero Hot Sauce
Hey Gents
Thought you might like my variation on a classic Habanero hot sauce.
We made three small jars of this on Monday and ..... only one and a half left today
This one isn't super hot so if you want extra heat add more chillis
The pawpaw cuts the heat quite a bit.
One small ripe pawpaw or a large ripe mango
4 large Habanero chillis
1/2 Medium onion
1/4 cup lime juice
1/2 cup water (add more if too thick)
2 cloves of garlic
1 inch fresh ginger
1 inch fresh tumeric or 1 teaspoon dried
1/2 tablespoon dejon mustard
Pinch of powdered coriander
1 tablespoon honey
1 teaspoon salt
3teaspoons molasses
Grate the ginger and tumeric
Blend all the ingredients in a blender until smooth
Pour into non reactive saucepan
Bring to the boil and boil for 5 minutes
Stir often as it will catch/burn on the bottom otherwise.
Pour into sterilised jars while hot.
Let cool and refrigerate.
It gets better as it ages... if it lasts that long.

Welcome FMS, That is a bewdy.
I still have Habs and Buhts producing and this may be the insperation to do something with them.
Not keen on buying pawpaw out of season Might have to look around for a sub

The Pawpaw was out of our garden so it cost us nuffin

You sure they are out of sesaon, I have seen plenty in Paddy's Market Sydney last few weeks and the price is down at $3.50 to $4.00 kg

An update on this recipe
If you use dehydrated/dried mangoes it goes a lot further.
Made another batch recently and had no pawpaws.
Soooo
Used two 160gm packets of dried mango.
Rehydrated it overnight, drained off the excess water.
Not real happy with the product of Thailand sticker but hey... it's what was available.
There was way too much sugar in the product, so draining the excess water helped remove some of it.
Blending with the other ingredients, it got real thick, real fast.
Used another 3 cups of water before it started to thin out enough and a much larger pot to cook it in.
Needed to add more molasses and salt to balance it out.
Still came out a little sweet for me
Even though I only added 1teaspoon of honey because of the excess sugar in the mango
Only added the same amount of habaneros (4) but the heat carried just as well.
Seems pawpaw must knock the heat more than mango.

Thought it was about time to make another batch, considering the last went over so well.
Bloke at work was asking about when the next batch was due.
Apparently his Missus needs a Habanero Hot Sauce fix.
Having the daughter and a couple of her mates over for dinner tomorrow night..... no hot sauce for the brined chickens
This will just not do.
Never one to stick to the same recipe every time.
Decided to use a fresh mango as I have a couple handy.
So same recipe as the first ..... except
1 large mango... instead of pawpaw
1 1/2 cups of water
2 large Habanero chillies
The reason for the change of course is the fresh mangoes are available and you need extra water when using the mangoes.
Less chillies cause these ones are large and the mango doesn't knock the heat down as much as pawpaw.
Still think it could have done with three..... my cheese and kisses didn't want to go that far
So now just have to wait for the jars of HHS to cool before going into the fridge.
Brined chicken starts this afternoon...
OOOOHHH can't wait for tomorrow afternoon,,, it's gunna be a good one.
The Missus has demanded that we don't give any of this one away...... just doesn't last long enough

The first sounds like my deal FMS. Still awaiting the pawpaw to ripen a bit. We have heaps of habs and this seasons on the mangoe tree have a bit to go. Cheers! CS
