May have to try that with some Ghost Chilli or 7 pot, most likely to be banished outdoors to do it.

i made this sauce using fresh mango and canned peach ( I had a large can and i needed to make a charcoal chimney).
its a definate winner.

I had to come back to this thread. I'm going to have to try this recipe. I love me some heat and it sounds like there is great flavor as well.

Ran out of HHS tonight .....
Used the last on some fish we had for tea.

So I guess the next batch needs to be made up.
The Habs are growing nicely and have several in the freezer ready to go.
All my tumeric is powdered or in the ground at the moment though.

Try the recipe, you won't be disappointed.

Just getting my first Birdseyes ripening and Firecrackes are going gangbusters ( larger Birdseye )

Had a look at -
Red chilli sauce ingredients:
6 red chilies
1 tsp lemon grass root
5 Garlic cloves, peeled
2 tsp chopped ginger
1 Onion diced
1 Lemon zest and juice
1 tsp Galanga
Cut the chili peppers in 1/2 & soak them in a cup of cold water for 15 minutes. Separate the seeds & discard them. Place the prepared chilies into a mortar or food processor. Add the remaining ingredients & blend well until a thick paste. Add a teaspoon of this mix to stir-fry's, Asian curry's and seafood's for a wonderful flavour.

Only thing I am missing is Galanga or Galangal but I can fleabay powder.

Jalapeno are just ripe looking to stuff them.

Habs flowering or just starting to fruit.
