Mountain Micks sweet Chilli Sauces

Mountain Micks sweet Chilli Sauces

Hi Guys here is my "Mountain Micks sweet Chilli Sauces" very fruit flavored medium heat sweet chilli sauce .
1kg long hot red chillies
2lt apple juice (no added Sugar)
375ml Malt Vinegar
3 Granny Smith Apples cored then pureed with skins on
1/4 cup Lemon Juice
3 cups Raw Sugar
11/2 tablespoons salt
 
Puree chillies with all the seed, now add all the other ingredients into a large pot , bring to the boil now reduce heat to a simmer for 4 hours and stir occasionally, until reduced by half, now blitzed it with a stab blender to smooth out the chillies, let cool for 10 minutes, now bottle into sterilized bottles cap with lids label and date made.

Looks good mate! So far my attempts at sauce making have been pretty bad, but super keen to try some more!

This one works every time. I all so got a not sweet chilli sauce which just a twist on this one and it works every time.

Mountain Micks Chilli Sauces

here is my "Mountain Micks Chilli Sauces" very fruit flavored medium to hot heat t chilli sauce .

Optionally you can add
4 to 8 cloves of Garlic
and for a darker BBQ sauce add 1 cup Molasses
Puree chillies with all the seed, now add all the other ingredients into a large pot , bring to the boil now reduce heat to a simmer for 4 hours and stir occasionally, until reduced by half, now blitzed it with a stab blender to smooth out the chillies, let cool for 10 minutes, now bottle into sterilized bottles cap with lids label and date made.

Here My Chilli Jam is sweet with a little bit of tartiest and full fruity taste and a lovely month feel lovely on toast for Breaky, very nice nice on a toasted Chicken & cheese toasted sandwich and of cause it is fringing Awesome on Vanilla IceCream and I mean Frigening Awesome.MM :D :P

These are great looking recipes Mick, thanks for sharing mate! I'm going to give the sweet chilli a go for sure! Do you think it will be ok if I half the amount? That's a lot of sauce ;)

yes ,
but by the time you reduce this amount down you only end up with 2lts of sauce and mate It will not last long at all. plus makes great gifts . MM :P :lol: :lol: :wink: :D

Thank you for sharing the recipes, made some sweet chilli sauce with a few home grown thai chillies thrown in for some kick and my son says its awesome :)

My question is where do you get those hexagonal sauce jars from ?? would like to bottle some for friends

Having trouble finding any in Sydney, are they the 250mml size :?:

Hi Glenn.

I get mine from Pacplus in Rockhapton as I use a lot 20+ carton a year they hold them as a stock item plus a lot of other people now use them for they products. PacPlus are agents for Cospak here is the bottle I use http://www.cospak.com.au/productdetails ... uctID=4529 make sure when ordering you order lids to match the bottle as they are sold seppately I got caught out only once, at the time I was not happy "Jan" MM :wink:

Looks good, tastes great but OMG is it hot - maybe I used the wrong Chilli?

All I can say mate is that your sauces are what legends are made of.

The not so sweet sauce (reduced sugar) is the best recipe for chilli sauce that I have ever made and I make a lot each year as well as pickled chillis and chilli and mango relish.
