Plank smoked salmon, tapenade and pancetta (video)

Post by Pitmaster X »

This is one of my favourites!

Plank smoked salmon, topped with home made tapenade and fried panchetta or bacon if you prefer. Even if you are not a fan of fish, this is a great dish.
Made it last weekend and hope you like it.

Let me know what you think.

Pardon my ignorance, but I'm new to smoking methods. What type of timber was the plank ? Hardwood or Softwood?
I currently just smoke fish in the hooded gas BBQ using ironbark sawdust and am keen to try other things, have a Weber knock off that I've used with chips but have found temperature control a bit difficult when using sawdust and it ignites.
Looked pretty good so I want to give it a crack.

Cedar planks work great - go to Bunnings or a timber supplier and buy a couple of their seconds of Cedar planks and cut them to a useable size, they should only set you back a few bucks.

Here is an interesting post about cedar planked fish viewtopic.php?f=10&t=35
Thanks for that, will give it a try soon
