Preheat BBQ till hottest.
Meanwhile,in a hot heavy pan fry with olive oil (dollop)
4shallots diced fine(NOT spring onion, shallots!)
2 Garlic cloves diced fine
1 tsp minced fresh ginger
for 3 minutes till changing colour and aromatic
Stir in
1tsp chili
1tsp cumin
1/2 tsp turmeric
salt and pepper
then add 2 large tomatoes diced, 1/2 cup of chicken stock and 2 TBS lime or lemon juice
and cook on medium for 5-10 minutes.
While this takes place, oil and place tuna onto super hot grill, sear and rotate, sear and turn, do the same for the other side, if they are thick sear the edges, turn again 2 times for thick portions, wrap in foi l and towels and take in to sauce, when sauce has two minutes to go, add tuna steaks and turn.
Serve.
