Whole Coral Trout Weber Q Baby

Post by Murdoch »

Hi guys,

I'm planning to cook a whole coral trout tomorrow in the Weber Q Baby.
Weighs 2.1kg (gutted and gilled), 55cm long, 8cm thick at shoulder, fins removed, scaled.
Planning to rub with a garlic, ginger, lemon juice, chilli, salt, pepper mixture over the outside and inside, then stuff with lemon wedges.
Wrap in foil, and cook over indirect heat.

This is my first attempt at this, but I've had mates cook them this way, and they were great.

Question 1: does this sound like a good approach?

Question 2: how long should I cook it for and at what heat?

Cheers

So here's the run down.
Wrapped in foil, flavours as above, scored flesh.
200 degrees celsius throughout the cook.
30min one side, then 20min after an easy flip by hand with gloves on.
10min rest afterward.
Flesh pulled off very easily, meat was cook and moist.
The foil was quite tight, so no BBQ flavours, and I probably could have had the exact same outcome in the oven.
Was great either way.

Think I'll stick with smaller trout in future, and get one of the rack frames so I can skewer the fish and have it stand upright.
This way no flip required, and I can open the gut cavity for an even cook, and marinade throughout with a brush.

Cheers
