Rainbow Trout

So I do aquaponics at home and has come home this afternoon to a tripped circuit on the pool/aquaponics power.
16 trout didn't survive. So I have scaled and gutted a dozen of them and now I'm a rush to find what to do with them.
I don't have a cold smoker right now (planned on getting one before harvest time)
Are they better cold smoked? If so and anyone around Bunbury, WA wants some, I got more than I need.

Will do a bit of searching for recipes tonight in amongst kids bath and dinner time hopefully they are asleep early!! Hahaha yea right :|

Hot smoked is fine, they'll last about 2 weeks in the fridge afterwards.
Best to brine them for 24 hours before smoking at about 100 for 1 hour.

If you have a sharp cleaver, I'd butterfly them to help with cook times.

Got round to smoking them today.
A simple brine-
1L water
2Tbs Salt
1Tbs Brown sugar
A good sprinkle garlic powder
A couple peppercorns

Left overnight, drained, pat dry, back in the fridge while I light the kamado.
Ready to start.

Done after about an hour with a couple small hickory chunks. Still not sure how much to use.

Great work robduca. Hickory might be interesting with the trout.

Do you have a vacuum sealer? They'll keep well in the freezer. Smoked fish is always better the next day IMHO

Yea I have read that they benefit from a day in the fridge. Might vac seal a couple, give a couple away and eat a couple.

Hi Robduca,

I also do aquaponics, well not at the moment due to extensions, but hope to get the system up and running again soon. IMHO you did the best thing with the trout, hot smoking. It's all I pretty much do with the trout at the end of winter, smoke (hot) them up, yum.

Is it warm down there? You were probably pretty close to having to harvest them anyway so timing was not too bad in terms of fish growth.

Yeah Chris, Rob and myself have met a few times, good bloke.
I had no idea what to do with these, can't remember the last time I ate a rainbow let alone cook one.
How did they come out Rob? What do you use them with?
