Sounds a little weird doesn't it?
this recipe it tastes amazing, the mix of smoke, sweet, and salt compliments this fish brilliantly.
a great way to change it up a little for the family
1. Apply 1.5 tea spoons of sugar cure to each fillet. Drizzle with maple syrup and a light sprinkle of sugar.
2. Refrigerate for 24 hours
3. Setup your bbq to 90c and a light smoke. I used apple wood
4. Cook untill fish is firm and reached safe temp. This took me 3 hours.
5. Mix into pasta, salads, on crackers ect ect.

Can you just clarify--Is the sugar cure separate to the sugar and maple syrup sprinkled on.
If so ,what is in cure or do you buy it?
