Cajun Seafood Pizza Peach Wood Fire Cooked on the Scottsdale

Hi mates,

I have been fooling around with the idea of doing a gourmet Cajun Seafood Pizza. My Cajun spice of choice was 2 tbsp. Mad Hunky Hot Ass Whang. I have found this rub to be an excellent Cajun spice that really goes well with shrimp, bay scallops and mushrooms. So I built me a nice Peach wood fire in the Scottsdale and cooked me one hell of a seafood pizza. Some of the meats used are Dungeness Crab, Bay Scallops, Large Shrimp and Andouille sausage. Oh I also included allot of sautéed mushrooms with garlic. Plenty of foody love went into this build that most would use a fork to eat. I however manned up and went without fork and did allot of picking bits up off the plate and table. The way it should be! :D :D :D

The pizza turned out amazing to say the least. The Dungeness crab was subtle but very flavorful as was the Andouille sausage. The spice was spot on and I have Mr. Mad hunky to thank for that. HAW rocks! :thumb:

My Recipe Details



Ingredients

Sauce

2 15 oz. Cans Tomato Sauce
2 Cloves Mined Garlic
1 Tsp. Oregano
1/4 Cup Diced Red Onions
1/4 Cup Shredded Parmesan Cheese
5 Basil Fresh Leaves

Pizza

1 Store Bought Pizza Dough (Garlic & Herb - Safeway)
Shredded Mozzarella Cheese
8 oz. Mozzarella Cheese Ball
1lbs. Large Shrimp (Peeled & De-Veined)
3/4 Stick of Unsalted Butter
1/2 Lbs. Bay Scallops
1/2 lbs. Dungeness Crab Meat
4.5 oz. Andouille Sausage
1/2 Red Bell Pepper Chopped
1/4 Red Onion Sliced
4 oz. Baby Bella Crimini Mushrooms
1 Tbsp. minced Garlic
2 Tbsp. Extra Virgin Olive Oil
2 Tbsp. Mad Hunky Hot Ass Whang Rub
1/4 Cup Flour
Corn Meal

Another great looking feed you've cooked up there Wingman. I love Seafood Pizzas, will have to try the Hot Wang on the next ones we do. Thanks for the tip.

Rwhinton, When you make your Texas Gulf Coast version please share the recipe and pics. I'm curious what you come up with. :D

I'll be happy to share. First, let me consult with the local fish monger, a fellow named Thibodeaux. As you can tell by his name, he has a bit of Cajun in his genes.
