CRabby Tater's Recipe - Loaded with Dungeness Crab & Bacon

This is a recipe I have used for about 20 years or longer. I have done allot of crabbing in the local Puget Sound waters and have always had an abundence of Dungeness crab. So I tried many different ways to use it. This is one of my favorites! I'm not sure what types of crab meat are available down under but this is worth a try. I have made it with imitation crab meat which is fish and it was still very tastey.

Ingredients

3/4 lbs Dungeness Crab Meat
5 Slices Thick Cut Bacon
10 Red Potatoes
6 Green Onion - Sliced
1/2 Green Pepper Diced
5 Cloves Fresh Garlic - Chopped
1/4 Stick Butter
Creole Seasoning to Taste
Coarse Ground Pepper to Taste

As I said on your other thread, that looks great!

So wish we could get Dungeness here!

Will have to give this a try with another type of crab.

that looks tasty. i reckon any crab worth eating would do, crayfish, bugs or yabbies/redcraw, probably even prawns, would most likely also work

Sure can, just a shame I don't like salmon. :D

As Al_ said though, I'll try one of the any number of other crabs/shellfish we can get. Just wish we could get Dungeness as it is my favourite.

Thanks for posting it, definitely something to try. The 'to do' list is ever expanding. :D

You will have no problems working it with Australian Crab meat Kendoll.

About one-quarter of the crab's weight is meat.[9] The flesh has what is considered to be a delicate flavour and slightly sweet taste.[10] Dungeness crabs can typically be purchased either live or cooked. Larger crabs are valued for the higher meat-to-shell ratio. Live crabs are cooked simply by dropping them into boiling salt water, waiting for a boil to return, and then allowing it to continue for 15 minutes, after which time the crabs are removed and placed into cold water to cool, and then cleaned. Another method of preparing crab is called half backing. Half backing is done by flipping the crab upside down and chopping it in half (from head to "tail"), afterwhich the guts and lungs can be scooped or hosed out. Many consider half backing to be superior to cooking the entire crab, because the meat is not contaminated by the flavor and or toxins of the guts. Furthermore half backed crabs boil faster or can be quickly steamed instead of boiled. Two common tools for removing crab meat from the shell are a crab cracker and a shrimp fork. Sometimes, a cleaver, mallet, or small hammer is used for cracking Dungeness crab, but the use of these devices is not recommended, as the integrity of the meat may be compromised due to the impact.[11]

They are correct about what they call "half backing" them when cooking them. I never cook them whole. If you do, the water ends up being green and just horrible which gets into the meat. Half back them and you get way tastier meat.

Great hotplate BBQ dish. For sure Shane, fresh Blue Swimmer would be the go for the crab meat.

I am thinking of doing that recipe using our green prawns (uncooked).

10 red potatoes what total weigh would that be as you can get small and large red potatoes?

kieth, the ones I used you can see in the video. They are small and medium in size. If you cook thie recipe let me know what you think of it.
