hey everyone,
ive got some apple and cherry wood for smoking. some of it looks a little old so my question is, is there a preferred time frame for fuit woods to be aged ie: 6-12 months? also some of it has mould and even a bit of rot on it. would it still be ok to use if i peel the bark of to get rid of most of the mould?

Well that is a tricky question, if the mould is only on the bark and from what I have read you should remove the bark anyway as it will give a bitter taste.
It may be OK to use, would not use any timber with rot in it. I don't know of a reason why if kept dry timber could be used for smoking for years, I have iron bark here that is 4 years old and I would put it in my smoker.

This is an oldie but one that is close to my heart so though I would resurrect.
Cherry takes 6mths to season given the right conditions. Apple on the the other hand is a full 2years.
Moldy shit should be burnt for warmth not for flavor.
