Gas Smoker User/Cooking Guide

Hi Guys and Gals.

I've been working with Hark to renovate the Gas Smoker user/cooking guide I wrote for them a few years ago. The new version is available for download now:

thanks for the guide. Sorry if this is a silly question but what is the safest way to add more wood to the wood chip box during the cooking process?

Heatproof Gloves! :D

Wayne (beachbums) had an idea for a feeder tube.

But remember the woodchip pan is the hottest removable part, so be careful!

Slide the pan out halfway (with your gloves on), use tongs as a lever to lift out the pan cover, to keep it stable:

You probably dont actually need to, unless you're wanting to schedule different smoked meats (say beef ribs and chicken wings) to be ready for eating at the same time.

Remember meat will primarily only absorb smoke whilst it's below 65 deg C, after that, your just wasting wood.

thanks guys. Can these woodchip pans take pellets or is it best to stick with woodchips/chunks?

Use pellets, chips or chunks or any combination of chips, chunks and pellets.
