Having a crack at Pastrami so have soaked a corned silverside in cold water for 12 hours and now have rubbed it down and into the fridge ready to hit the ProQ for a smoke on Saturday

A few snaps from a cook up over the weekend, did a free range pork eye fillet my pastrami and a few wings plus a mac'n cheese all in all very well received by the clan and I'm looking forward to eating pastrami sanga's all week!

So many pictures getting around of awesome looking beefies so I thought it would be in my best interest to do some myself for dinner tonight. A quick visit to my local awesome butcher and picked up a fantastic looking 3kg slab of Cape Grim Beefies a quick trim a liberal dusting with some Tatonka Dust and into a 250f ProQ with oak wood, cook time looking at 8hrs I reckon.

Damn Steaksy. That's looking delicious already. I might have to get me some of that Tatonka dust I'm thinking.
