The internal temp has been on that temp for an hour or so ,I'm assuming it's plateaued.

Chris I'm in the same boat even though I use a maverick during the cook I too want a high quality thermometer for my saffire

No problem from what I can see. I used one like that on my Weber kettle for a long time. Not anywhere near as good as a Maverick but OK. Just remember the temp at the top is different from the temp on the grill, and can be around 20 degrees (F) I'm assuming you are putting it up on the top vent. No...
