Beef cheeks again, and made a Northern India curry this time. Ghee saffron rice as well. The curry was bloody amazing, very complex and the meat was sooo tender. Went my own way with the rice, spicy potatoes get added into the curry at the end. This is going to be a favourite. http://i1283.photobuck...

Thanks 2browndogs! :D I cubed a hickory smoked brisket point end, and made a gravy and filling with onion, carrots and celery, red wine reduction, pepper and herbs, thickened with butter and flour roux. I recommend not buying a set but carefully choose individual knives that suit the function. A good quality chefs knife 9-11 inches will handle most kitchen jobs. Bones?
