Re: Worcestershire Powder

Yup, Takonta powder uses it. Buccaneer, that says it might not be worth my while. I got mine from USA, and I was really looking forward to it. I LOVE Lee and Perrins Wooster!! However, the result was very disappointing but I hesitate to say that you will think the same because I am a contrary basta...

Re: Davy Crockett vs Holy Grail

Hi All, At the Speakeasy on Sunday I conducted a very informal unscientific experiment. Two Rib Eye steaks (taken from the same rib roast) were cooked at the same time, to the same temp (55 degrees internal), rested for the same time, then sliced and given to people at the Speakeasy - who were then...

Re: Help with Slow Stew/Curry which meat is best?

Very interesting post Buccaneer. I guess we mostly went with the subject line 'Help with Slow stew/curry', but your point still stands. While the idea was to fry off a paste and cook, I agree that is mostly associated with South East Asian, it can still be done with Indian slow cooked curry's. But ...

Made up a spicy rub and coated a Boston Butt overnight. Then smoked it giving it a maple syrup and citrus glaze toward the end. http://i1283.photobucket.com/albums/a542/Generalissmo/DSC_0162_zps0nmofdan.jpg Smoked some peppers and made fajitas as a taste test. http://i1283.photobucket.com/albums/a54...

Re: Help with Slow Stew/Curry which meat is best?

I would appreciate some simple advice which I probably should know but I have struggled. When cooking a Curry I like to make the paste, fry it off, add some coconut cream or similar and slow simmer for an hour or two depending on the meat chosen. I have had success with seafood cooked quickly and c...

Here is a simple delicious thing to do with fresh snapper. Diamond cut, and marinate in straight lemon juice and herbs. I used garlic chives but marjoram, tarragon, parsley and so on all work. You want to keep the marination under 3 hours or the acids will overcook the fish. http://i1283.photobucket...

Sometimes the idiots are a positive thing.Local Hungry Jack drive thru, I couldn't understand the girl at the order speaker and she told me to drive up. The line of cars edged forward. When I got to her window I tried to repeat my order but she put her hand over the mike and snarled "Look, we a...
