Sounds similar to the Outback steakhouse copycat recipe which is really nice and versatile. They use their sauce in a chicken dish which you could use your dipping sauce for. Funny but after my post above I went for a look at the new Masters store (I am in Canberra) and found a two sided (waffle and flat) cast iron plate that covers roughly half the lower rack. Just for those interested the Canberra store had the vision Kamado for $619 this afternoon.
I just use an old tray on my the bottom of 2 shelves for heat deflection. Must get another and fold in half.

I have heard the TGI ones are more like hollow shells. The things I made were more like pies with fillings piled higher than the casings.
Have seen some done with salami and some with slices of roasted capsicum as toppings that i would like to try.
